This is an alternative to using milk & eggs like what you may have grown up with. If you use a lot of tofu or soy products you may be building up excessive uric acid which is found in soy. So for this recipe you can replace the tofu with rice milk. If you do this, do not use the water when you blend the other ingredients.

Mix all ingredients except bread in a blender until smooth. Pour blended mixture into shallow dish. Dip the whole wheat bread into mixture and cook in a non-stick pan. We find that using Exekiel bread better when dealing with a diabetic.
